But its the careful air drying on wooden racks fresh from the brass extruder that gives this simple pasta its artisan character.  The brass gives ridges to our pasta for a strong hold with any sauce. The slow  air dry allows the water and semolina to solidify this hearty pasta- a practice used in Coastal Naples, Italy by using the salty sea air to help create a strong noodle for their traditionally light sauces. What you are left with is a pasta versatil enough to elevate any plate it goes on.

  • Recipe Suggestion:

    Ingredients:
    -1, 16oz bags of Classic Artisan Pasta
    -2, 5oz cans of tuna in oil
    -1, 15oz can of cannellini beans 
    -A bit of minced garlic
    -two jars of your favorite red sauce, either from your own family stash or from your local market.

     

    Directions:
    -put all of the ingredients, except pasta, in a large sauce pan and simmer on low for 30mins.
    -toss it with the cooked pasta
